In homage to the Grandfather of Pasties, the Cornish-County follows the Cornish Pasty Association’s method of creating this delicious “meal in the hand” utilizing the freshest County ingredients + just a sprinkle of magic in the dough courtesy of Grandma Archer’s well tried + tested, but oh-so-secret pastry making tricks. | Lean ground Beef, swede, potatoes, onions + a healthy sprinkling of sea salt + ground pepper, all wrapped up in light, flavourful short-crust pastry.
The bounty of three ancient British realms unite in this pasty, marrying the Welsh leek with a classic West Countryesque cider + finished with a creamy grainy mustard, reminiscent of Norfolk—all in support of hand-trimmed Pork loin, notably found in all the kingdoms of Britain. | Pork loin, fresh leeks w/ butter sautéed onion, grainy Cressy Mustard, cream, West Country style Cider, carrots, sage and sea salt & ground pepper, lovingly encased in Grandma’s short-crust pastry.
Due to the awesome popularity of our bushfire chicken and chutney at The Horn pop-up food stand at Cape Vineyards, we were inspired to create a tributary pasty to take home. | Slow-marinated chicken, blending Snip Family Farm marinade with spices and carrots roasted in garam masala. This deliciousness, wrapped in a high butter short-crust pastry.

This beauty is a spicy tribute to India’s most creative street vendors, conjuring the most swoon-worthy flavours + aromas from a complex blend of herbs + spices + fresh veg + pulses. Our pasty is wrapped in a choice of hand made vegetarian or vegan pastry, made golden with a non-egg wash. | Chickpea, potatoes, onions, garlic, ginger, serrano chillies, cilantro, cumin, ground coriander, turmeric, cayenne, cinnamon, cardamom, bay leaves, salt, and just a hint of Mumbai mystery.

Cornish Pasties have an eternal place in the hearts of the English. In Cornwall, the ingredients + recipe are so strictly patrolled that any deviation cannot legally be called a Cornish Pasty. While the measures + contents of our traditional beef pasties are exactly on target—our Prince Edward County, Ontario made pasties are 5,456km away from being deemed authentically Cornish. But that's okay—we're as proud of our English heritage as we are of our County status. And best of all, we're so very proud to be bringing our very special, handmade pasties, forged in the traditional style to our friends in the new world.
All of our pasties are delivered fully cooked + either fresh or fresh-frozen. If you're cooking from fresh, preheat oven to 375° degrees (F) for 15-20 mins or until the pasties reach a minimum internal temp of 165° degrees (F). Freeze any pasties from your fresh order you'd like to save for a later date and ideally thaw in the refrigerator before cooking as above. If cooking from frozen, however, preheat to 325° degrees (F) for 25-35 mins or until pasty has a minimum internal temp of 165° degrees (F).
We love Prince Edward County. From coast to coast, this magical island is packed with everything that makes a place great—from white sandy beaches to endless ocean-like lake views, an incredible food scene (complete with top tier wineries, cideries and breweries), a close community of talented people + huge numbers of visitors hoping to do + see it all in a weekend. Naturally, we wanted to make a product that leveraged the best of PEC + could be eaten quite comfortably on the go!
We're pretty spoiled for ingredients here in The County. There's so much agri-talent in this place, so much option for customizing our pasties. This means marinating meats in beautiful County wine, cider or beer. Using produce from our friends' and neighbours' boutique farms + stalls. Working with local greats to create custom sauces + condiments to enhance the pasty experience. Whether you're wandering the vineyards, the taprooms, the beaches, or stocking your freezer with delish meal options—our pasties are a taste of the whole County in one hand.
Pasties take a few days + a few stages to make and we're happy to report that each batch gets snapped up pretty fast! We make a certain number in advance of delivery days (Tuesdays/Fridays), but if you've something in mind, particularly in any quantity, it's definitely a good idea to pre-order. 3-5 days notice is typically enough notice subject to the availability of ingredients and we can't wait to stock your freezers with our beautiful pasties!
Cornwall is famous for its mining, fishing + beef industries. The story goes, Cornish wives made pasties with a crimped edge so their husbands could eat a whole, satisfying meal down in the mines with dirty hands, throwing away the crimp at the end. Later on, Cornish fishermen discarded their crimps into the ocean to attract the fish. Our pastry (+ crimps) are made using our grandmother's special recipe and method, so we highly recommend just eating them!
